Benz: 70% Corvina, 20% Corvinone, 10% Rondinella and Molinara. “Ripasso “ is an ancient technique in which the “Valpolicella wine “ is fermented again on the Amarone skins. This oenological practice reflects the traditional farming values ​​of “not to waste “, in this case the peels with their rich color, unique aroma and unfermented sugar, obtained from the production of Recioto and Amarone. The second fermentation therefore improves the quality of the wine, which is then aged for at least 12 months in 2000 liter oak barrels and in 250 liter barriques.
